Bodegas Toro Albalá has been producing high quality vinegars in its facilities in Moriles for decades. The production and aging of vinegars has traditionally been an activity linked to the wineries of the Cordovan countryside.
The use of the fine wines of high quality of Bodegas Toro Albalá has been the basis to create vinegars with the expertise of the know-how in generous wines. The characteristics that these fines will contribute to vinegar will be the high content of acetoin and above all an aromatic complexity. Vinegar aging takes place in Castilian oak barrels with a long aging in years, typical of the style of its creator, Antonio Sánchez. The influence that the natural environment exerts on the wine that is used as raw material will mean that after passing through the years we will find vinegars with the personality of their vintage.
Following the regulations of the PDO "Vinagre de Montilla-Moriles" for which it is currently protected, we have Vinagre Gran Reserva and Balsamic Vinegar with Pedro Ximénez.
Gran Reserva vinegar is made with fine wines and aged for more than 30 years.

Dry and intense Balanced and pleasant acidity. Of great gustatory and aromatic persistence, with aromas of nuts and toasted.
Salad with anchovies or tuna tartar. Exceptional with all Asian cuisine for its spicy aromatic contribution.
