The main characteristic of the grapes used to make this wine resides in the versatility of the land from which they come and this diversity is capable of achieving the complexity that exists after the wine. In such a way that always starting from centenary vineyards of the Ribera del Duero, we look for the best grapes from limestone, clayey, stony soils…. located at different altitudes.
ELABORATION AND AGING
The grapes will always arrive at the winery in boxes of 10-15 kg, once harvested with an exhaustive selection. The moment of said harvest will be marked by the different ripening indices carried out, until we find the exact moment for it.
A light treading is carried out daily before the start of the alcoholic fermentation. After the beginning of the fermentation, in addition to the pressing of the bunches, the appropriate punching was carried out. 18 days after vatting, the wine was discovered and introduced into 15 new French oak barrels from different forests, to achieve the aromatic complexity that characterizes it; the stay in the barrel lasted from mid-November 2012 to July 2014, when the wine was bottled.
Bottled on a waning moon day.
Dark red color with bright and vivid violet reflections. It is a red with a high and deep layer.
The great diversity of aromas, confer a high complexity to the wine, first of all finding the ripe red and black fruit, along with rose petals and hay. Together with the spicy and balsamic tones, finally joining the previous aromas, light toasted and caramelized tones appear.
The high volume on the palate gives us unctuous and velvety sensations, making the palate a fine and pleasant sensation.
In retronasal we recall the great aromatic complexity that we perceived in the olfactory phase.
