For years, we have devoted much of each production campaign to produce AOVE with differents olive variety, to provide a genuine monovarietal oil in "Limited Editions"
We have tested different ripeness phases, combining it with different moisture content and modifying many parameters (type of grinding, churning time and temperature, etc.) to achieve the best quality of each variety.
This large study has been concluded with the personalization and optimization of the cultivation and extraction process of each of the varieties we work in. However, natural factors such as the weather and the ripening of the olives, makes not always be possible to get a exceptional AOVE of each variety. But when we get it, the result is so spectacular that it is worth the effort.
With some olive varieties is extremely complicated to get a genuine, spectacular and differential monovarietal oil.
Arróniz variety (yellow version): Green, dense and full-bodied oil. Clean and fresh aroma of green vegetables, artichoke, apple, banana peel, grass, notes of tomato and bitter almond. In the mouth, the artichoke and the tomato stand out, it is fluid. Amagor and itching medium-high
Koroneiki variety (pink version): Dense, full-bodied, yellowish-green oil. Clean and very intense green aroma. Banana peel, green banana; freshly cut grass and green apple, and to a lesser extent reminiscent of artichoke. On the palate it has a very pleasant bitterness that combines perfectly with the flavor of banana and apple, leaving a mild late itch.
Tosca variety (blue version): Dense, full-bodied, yellowish-green oil. Clean aroma and very different from the conventional. Candies and gummies; fruits of the forest and raspberries, to a lesser extent banana and kiwi. Very pleasant initial sweetness that uncovers the raspberry together with a mixture of strawberry and banana. Light bitterness and mild late itching.
Arbosana variety (red-white version): Green, dense and full-bodied oil. Clean and lively aroma, surprising with its fresh smell of green herbs and apple. Notes of tomato, tomato and green banana are appreciated. Its flavor is almond-bitter; in the mouth, apple and banana stand out. Moderate, fluid itching.
