In relation to viticulture, we work with native grape varieties of Rías Baixas, giving great importance to the grape-land-climate-winemaker aspect. We have recently gone beyond the natural border coexisting with the Portuguese name Dão.
We have the assistance of small winemakers, something vital if you want to achieve a rational and respectful work with the environment. Many vines use a spontaneous plant cover to obtain more concentrated grapes, improve soil structure and avoid erosion.
In Galicia, the vineyards are located in the south of Pontevedra, in the Tea County area. The grapes are planted in the "Xabre" soil, a popular name for eroded sandy granitic soils. Use the pergola or vine formation system. The white varieties are Albariño, Treixadura, Loureiro, Godello and Torrontés; and the reds represented by Susón, Espadeiro and Pedral.
From Portugal the grapes come from Quinta da Pellada, owned by Álvaro Castro, where the vines coexist between 3 and 70 years. The autochthonous varieties that we use are Alfrocheiro, Jaén and Baga.
The work of the winery does not conform to the established rules, each year it depends on the harvest. The harvest is done by hand with the selection of the grapes made in the vineyard. The fermentation of the alcohol takes place in stainless steel tanks, and depending on the vintage, the fermentation takes place and the aging time is decided.
